Our Jerk Marinade is inspired by one of Chef Castro’s favourite childhood memories. A childhood friend’s mother named Mrs. Mackenzie, shared her love for food and inspired him to create his own jerk that is one of a kind. 

 

Jerk is a style of cooking in Jamaica and this marinade features roasted allspice, which is one of the most important ingredients in Caribbean culture, and habanero pepper.  We use the Jerk Marinade to enhance our chicken and is the counterpart to our Jerk-Up BBQ Sauce. 

 

Perfect dishes to pair with this sauce are our jerk chicken with coconut scented rice, jerk pork loin with fried plantains, or our jerk tofu burger with Island slaw.
